Can broccoli make a healthy pizza crust? -Consumer Reports

There is a healthy-sounding trend in supermarkets: pizza crusts made from broccoli. Claims include "only 3 net carbohydrates per serving" and "only 80 calories per tablet". Indeed, a crust made of healthy vegetables may be better than refined white flour. However, CR experts found that the composition and nutrition of these three types of cauliflower pizza crust are very different: Cali'flour Foods Plain Pizza Crust, Caulipower Cauliflower Pizza Crust and Realgood Pizza Co. Cauliflower Crust.

Consider calories. We see that the calorie count of a bread crust ranges from 120 to 600. This is because their ingredients are very different: some contain refined grains, eggs and cheese, or soy flour or nut flour, which increase calories. In contrast, refined flour 12-inch Boboli thin pizza crust contains 850 calories.

Pay close attention to carbohydrates. A single piece may have a weight of 2 to 29 grams. This is a large range, especially because cauliflower is not high in carbohydrates (5 grams in a cup). Why is there a difference? The crust may include rice or brown rice flour, sugar, tapioca starch, and corn starch, which provide carbohydrates. Even though cauliflower is listed as the first ingredient, many crusts do not list the quantity-but lower carbohydrate content and less starch may mean that the crust contains more cauliflower.

Focus on fat. Cauliflower has almost no fat, but there are definitely added ingredients such as cheese and oil. Realgood crust (pictured below) contains 15 grams of fat per serving, probably because it contains mozzarella cheese, parmesan cheese and coconut flour.

Suspect sodium. We see a range of 180 to 500 mg per tablet. Adults should not consume more than 2,300 mg of sodium per day.

Our breakdown here is for a whole crust, but the recommended serving size is one-third of pizza.
