In my time, I have made a lot of soy sauce in a soggy bowl, trying to make the fried rice land as it should. A few small things helped me realize this dream.

First of all, the rice or cold rice served last night was just a ticket that gave me the courage to stir-fry for another day. Secondly, it's a bit like a lot of great dishes, it doesn't need a lot of addition to get it across the production line.

In fact, fewer ingredients make it harder. .. Add some soy sauce and turbocharge.

Cooking time: 10-15 minutes (using pre-cooked rice)

Before we pack the car for this holiday, you need to make sure that the rice you use is cold, otherwise it will be overcooked and you will end up making a mess.

Strong move: If you cook your own rice, rapid cooling is a wise move. Spreading it on a pallet and then taking a quick short trip on the piste can get you out of trouble, or if you are not skiing in France, then maybe just put it in the refrigerator, eh? Or, use the leftover rice from last night.

When the rice is cooling, cut garlic, carrots, peppers, shallots and speck or other vegetables into small sizes to give off a "quick cooking" atmosphere, and then stuff them all into a bowl.

Beat the eggs into a bowl and mix well.

Now, go to the stove and get yourself a small pan. Put it in the low-medium range and add some oil (when I used sesame oil here, Uncle Roger told me on YouTube that because it should not really be heated, you can use vegetable oil or peanut oil if you want) . Going to the eggs. Season yourself, don't cook them completely, you just want to stir them gently until they are firm enough and not liquid. Put them in their own precious little bowl.

Take a larger pan or wok and pour some oil. You want this to be nice and hot. Put all the chopped things in a pan along with the peas and fry them until the meat starts to brown a bit (or your vegetables are cooked but still hard). If you like your meat a bit more crispy, you can start with the meat for a few minutes.

Another good technique is to use wooden tools, because metal tools will beat the rice.

Next, put your eggs back, then add the rice and stir gently

Add a few tablespoons of oyster sauce, then your soy sauce. Don't add too much to the soy sauce, it is more or less liquid salt, try to recover from too much salt in the kitchen. Stir them together and cook for another 4-5 minutes, or until the rice is hot again. Treat rice well. This is your dinner, give it some tenderness of love.

Once it is heated through, probs turns off the furnace, eh? How about it? Not even 5 minutes. Put your rice aside and handle the green onions.

I like to treat green onions like leeks, so cut off the ends and discard the really dark green part (or save it for inventory). Chop them up, add to the rice and stir well, then serve-if you like, add a little sesame oil and a little coriander on top

easy! Go get it, champion.
