One constant of the Vancouver restaurant scene is that it is always changing. Closing one day may mean that others have a new opportunity to open the restaurant of their dreams-or expand their empire. Although there is a lot to say about eating out in your favorite and familiar places, when you want to try some new places, the city always has a lot to choose from.

We have collected 10 of the freshest new restaurants in Vancouver. These newly opened attractions will be included in the must-try list this fall.

This is a new destination for Italian food in Chinatown, especially food inspired by street food in Florence, Italy. This restaurant, open day and night, offers casual lunches, centering on simple sandwiches made with schiacciata, a type of bread similar to focaccia that the owner grew up in Italy and enjoyed. After the aperitif (drinks and snacks) time, the dinner star pasta, salads, shared plates and the gnocchi dishes we’ve heard of are mouth-watering.

This project is from the same top-notch team as Vancouver’s famous Bao Bei and Kissa Tanto, and it’s all about Singapore’s comfort food, such as laksa, nasi lemak and kaya toast. Although the restaurant currently only provides daytime service, Nancy Go Yaya's goal is to provide a night bar experience as soon as possible.

If you blink, you will miss Country Roads BBQ replacing Peckinpah in Gastown. The address is now the location of Röosh, a restaurant celebrating Swiss comfort food such as rosti (fried potatoes) and hot pot.

For something different, check out the laboratory in the city center. This restaurant serves lunch and dinner every day, focusing on food prepared using the technology of cooking ingredients using a water circulator in a vacuum-sealed vacuum-sealed bag. The result is that the dishes are completed quickly and made with less cooking oil or butter.

Vancouver has just opened a new store serving authentic French crepes. Ça Marche is located in the growing "restaurant row" of the Vancouver Tower development, from the team behind Kitsilano's enduring Au Comptoir French bistro. Here you will find a menu of delicious (smoked salmon, Parisian ham or eggplant) buckwheat crepes or sweet (suzette, banana or spiced honey) traditional crepes. The restaurant is open from Wednesday to Monday from 5pm to 10pm

The gate will open on November 10th in Skewers, a Greek product from the historic Gastown (located in the former canned sardines), all about kebabs-also known as skewered meat. Enjoy the meat and golden fries on a plate, or a gyro wrap with all sauces and cut edges.

Commercial Drive’s popular Kin Kao’s brother restaurant opened and operated, serving classic Thai dishes and natural wines in a modern space. Look for snacks, appetizers, and main dishes that are rich in rich Thai flavors. Walk-in only, no takeaway yet; dinner will be served from 5 to 10 pm from Thursday to Monday

The people behind Vancouver's popular DL Chicken, Downlow Burgers and Vennie's Subs are here again-this time, they have created the ultimate convenience store meeting place of your dreams, complete with collectible sneakers and urban art. They are making "choose your own adventure" nachos, specialty hot dogs, and various local and big brand snacks, including their own corn nut series. Take-out options include quick and affordable cold foods such as noodles, spicy kimchi, and homemade pizzas that can be warmed at home. Once they are up and running, they will give Starbies a try under the same roof with coffee drinks, soft services and milkshakes, slurries, and the most exciting series of non-alcoholic beverages.

This new suppressed sushi restaurant on Granville Island hopes to show Vancouver something they have never seen before. "Cofu offers pressed sushi, allowing customers to customize the type of rice and the combination of ingredients and sauces," the company explained. The result is a dizzying selection of meat, seafood and vegetable categories on the menu, as well as French-style sauces. The food is rich and varied, and the menu provides customers with multiple options to customize their sushi experience, including vegetarian, vegan, and gluten-free.

Vancouver has a new place to eat late-night Asian fusion cuisine. This restaurant called "District Eleven" is the next chapter of a restaurant "operated by a chef", which has many loyal customers in the previous iteration of Pho Pho You in the New West. Unfortunately, Pho Pho You was destroyed by fire, but the team was encouraged by the crowdfunding campaign and is starting again. The official opening is scheduled for November 11.
